Horaiya Honten was established in 1906 and for 112 years, we have been making koji (rice malt) using our traditional koji fermentation techniques. With this koji, we produce miso, amazake, soy sauce koji, and sagohachi pickling base. We obtained Kosher Certification and hope to spread the beauty and value of koji internationally.
